Our bread and butter is traditional Japanese water stone sharpening for every chef knife especially Kataba and Ryoba style Japanese knives. We also use a combination of techniques to sharpen western style culinary blades and outdoor, hunting and combat blade ware. For Sydney residents we offer an in store knife sharpening service for Knives and Blades. We will endeavour to get your blades sharpened as soon as possible, but please allow up to 48 hours for serious blades that need a lot of work. Basic culinary knives can be done on site and back to you within the hour or up to 24 hours when busy. Our Techniques


There are several approaches on how to sharpen a knife. At Blade and Stone we use a combination of rotary water stones and many varying grits of Japanese water stone for all types of blades. Arkansas oil stone and diamond profilers are also used for heavy equipment such as axes, hatchets, machetes and short swords/bayonets. Outdoor and combat blade ware generally come with awful factory profiling that is laser cut and with a micro bevel. Micro bevels are great for culinary knives, but useless in the field for skinning, hunting and thrusting/slashing blades. Therefore one primary bevel is ground into all non culinary blades to maintain edges that last their rough use outdoors for the hunter or soldier. We do endeavour to offer specialist services to the true blade aficionado.

Often our combat blade sharpening cost can out strip the cost of the actual knife. True hunters and soldiers know the value of their tools and only carry quality. The edge that can be put on R2 powder steel or Hitachi Blue 1/ White 1, will always be infinitely superior to cheap knives. You cannot compromise on quality steel and quality forging methods. Note, traditional sword polishing is not provided for any sword with an estimated value of less than $3000 AUD. P.O.A, this utmost traditional service is reserved for a maximum of two customers per month and is outsourced to a certified Japanese sword polisher.

Fear not, we offer all manner and make of repair and can re-profile, re-bevel, de-rust and return your blade to its previous glory within reason. It may look a little different but rest assured that blade will cut again. Prices vary on the make, style and steel. We also pride ourselves on the work we do on single beveled Kataba style Japanese chef's knives such as Yanagiba, Kiritsuke, Usuba and Deba. Good Chefs know these blades can cost anywhere between $300-$3000 on a good day! We can fix and sharpen them all. The majority of blades we sharpen are finished on leather to a fine polish.

Across Australia, each state has its own Prohibited Weapons Act, which covers the prohibition of many types of blade ware. It is your responsibility to up hold the law. We refuse to sharpen anything that is illegal in the state of NSW, i.e, balisongs, flick knives and trench knives/push daggers. Also we refuse to sharpen anything in the state of NSW for export to another state contravening their home state laws, i.e, swords are legal in NSW but classed as a prohibited weapon in VIC.
